1. Remove stones/debris by rinsing in a colander
  2. Soak in water (top off with 2-3 inches of water for >= 8 hours)
  3. Sauté half an onion and jalapeño in a large pot on medium heat
  4. After Onion softens add:
    • cumin
    • drained beans
    • water
    • oregano
    • salt and pepper
  5. Cook until beans are falling apart and the liquid has thickened (at least 1 hr)
  6. Season:
    • squeeze of lime juice
    • more salt and pepper
    • chili powder
  7. Garnish the pinto beans with cilantro and red pepper flakes
