General dry beans

  1. Add salt and water to beans (1 tablespoon/1 quart water)
  2. Overnight soak: Soak for 8-12 hours
    • Quick soak: Boil beans in water for 2 minutes, then remove from heat and soak for 1 hour.
  3. Drain and Rinse
  4. Boil 3 cups water to 1 cup beans for 90 minutes (15 minutes less for black beans)
  5. Drain beans
  6. Add acid (vinegar, tomatoes, lemon/lime) to avoid beans toughening
  7. 5 day fridge life

Add Garlic, onion, bay leaves, herbs for taste
