General dry beans
- Add salt and water to beans (1 tablespoon/1 quart water)
- Overnight soak: Soak for 8-12 hours
- Quick soak: Boil beans in water for 2 minutes, then remove from heat and soak for 1 hour.
- Drain and Rinse
- Boil 3 cups water to 1 cup beans for 90 minutes (15 minutes less for black beans)
- Drain beans
- Add acid (vinegar, tomatoes, lemon/lime) to avoid beans toughening
- 5 day fridge life
