General dry beans
- Overnight soak: Cover beans with water and soak 8-12 hours
- Quick soak: Boil beans in water for 2 minutes, then remove from heat and soak for 1 hour.
- Drain and Rinse
- Boil 3 cups water to 1 cup beans for 90 minutes (15 minutes less for black beans)
- Add salt or acid (vinegar, tomatoes) to avoid beans toughening
- Drain beans
- 5 day fridge life
